Aioli has been gaining popularity and it's easy to taste why. It's like the best mayo you've ever had, it's delicious on nearly everything, and it comes in so many flavors.
I love my aiolis really tart, as most of the time I use them with fried dishes (Fried Chipotle Polenta Balls, french fries, dumplings) and the citrus really helps to balance the richness.
This aioli is really simple to put together, is luxuriously thick and creamy, and is packed with lemon and garlic. If no one was watching, I would eat it by the spoonful.
Quick & Easy Lemon Garlic Aioli
Yield: makes about 1 cupIngredients
- 2 tablespoons chopped fresh garlic
- 2 tablespoons roasted garlic
- 1 lemons' worth zest & juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 large egg yolks at room temperature
- 1 cup olive oil or vegetable oil
- Blend fresh and roasted garlic, lemon juice, lemon zest, salt, pepper and 1/4 cup of oil in a blender until smooth.
- Add egg yolks. (If you forgot to take out your yolks in advance or you're concerned about using raw egg, you can whisk the yolks in a double boiler for a minute or two. Just don't scramble them!)
- Blend the yolks and leave the blender running. Pour the remaining oil into the blender very, very slowly in a steady stream until the aioli becomes thick.
- Taste and add more salt or pepper if needed.
Serve with Fried Chipotle Polenta Balls, french fries, on your favorite burger, or with any dish you'd normally add mayo to for an extra punch of flavor.
